Lavender Lemonade

2 cups water
1 cup honey
2 Tablespoons fresh or dried lavender buds
1 cup lemon juice
2 cups sparkling water

In a medium saucepan, bring the 2 cups of water, honey and lavender buds just to boiling over medium heat.
Remove from heat.
Let steep for 10 minutes.
Pour through a fine mesh sieve into a 2 quart pitcher.
Discard lavender buds.
Let cool to room temperature.
Stir in lemon juice.
Cover and chill for 4-24 hours.
